Makes 4 servings
4 x 6 ounce pieces of salmon
4 oz (1/2 cup) avocado mayo
1 cup fresh spinach, chopped
2 cloves garlic, mashed
1/2 cup freshly grated Parmesan cheese
1/2 tsp ground black pepper
Seasoning:
1 tsp paprika, 1 tsp garlic powder, 1 tsp cumin
Cut a slit or pocket about 3/4 quarter of the way through each piece of salmon. In a small bowl, mix the mayo, spinach, garlic, Parmesan cheese and pepper. Fill each piece of salmon with the mixture, packing it in! Mix the seasoning and rub it on each piece of salmon. Add the salmon pieces to an oven-safe skillet. Bake for 16–17 minutes, or until cooked to your liking. Plate and enjoy!
