Creamy, cosy and comforting 🥧 Umami Portobello & Chestnut Mushroom Pie 👇 Ingredients 1 tsp marmite 1 Brown onion 80g Chestnut mushrooms 1 Garlic clove 1 Leek 2 Portobello mushrooms 160g Puff pastry 1 tbsp Umami seasoning (or nutritional yeast) 11g Vegetable stock mix 50ml Milk 1 tbsp Flour Preheat the oven to 220°C/ 200°C (fan)/ gas 7 Peel and finely slice your brown onion and chop your leek in half lengthways, then top, tail and slice finely Heat a large, wide-based pan (preferably non-stick) with a drizzle of vegetable oil over a medium heat Once hot, add the sliced onion and leek and cook for 6-7 min or until softened Meanwhile, slice your chestnut mushrooms and portobello mushrooms finely Peel and finely chop (or grate) your garlic Once softened, add the sliced mushrooms to the pan with a knob of butter and cook for 6 min or until tender Boil half a kettle Dust your work surface with a generous sprinkling of flour Unwrap your puff pastry and roll it out with a rolling pin until it is large enough to cover an oven-proof dish Once the mushrooms are tender, add your flour with the chopped garlic and cook for 1 min or until fragrant Combine your milk with 100ml boiled water in a measuring jug with your umami seasoning, Marmite and vegetable stock mix – this is your umami stock Once fragrant, add the umami stock with a generous grind of pepper and cook for 3 min or until thickened – this is your pie mix Transfer the pie mix to the oven-proof dish Top the pie mix with the rolled pastry and crimp round the edge with a fork Score a cross in the middle of the pastry and put it in the oven for 15-18 min or until puffed up and golden – this is your umami portobello & chestnut mushroom pie #pie #pierecipe #marmite #comfortfood #comfortrecipes #winterrecipes #plantbased #pies #foodtok #veganrecipes #gousto

Feast your eyes on this 😍 Oven Baked Crispy Pork Belly With Wedges & Rocket: 11g Chicken stock mix 16g Tomato paste 20g Rocket 300g British pork belly 1 Sweet pointed pepper 1 tsp Ground coriander 1 tsp Ground cumin 2 tsp Ground smoked paprika 1 tsp Dried oregano 3 White potatoes 1 Brown onion Preheat the oven to 220°C/ 200°C (fan)/ gas 7 Boil half a kettle Heat a large, wide-based hob-safe oven-proof casserole dish with a little drizzle of vegetable oil over a high heat Score the fatty side of your pork belly in a criss-cross pattern by drawing a sharp knife through the skin, deep enough to reach the meat below Season with a generous pinch of salt and rub it into the criss-cross pattern Add the scored pork belly, fat-side down, to the dish and cook for 2 min or until the fat is golden then flip over and cook for a further 1 min Transfer the pork belly to a plate and reduce the heat to medium Meanwhile, peel and chop your onion into wedges Cut your potatoes into wedges Deseed your sweet pointed pepper and cut into thick strips Add the onion wedges to the dish with 1 tsp flour, your tomato paste and half your white wine vinegar Add your ground cumin, ground coriander, half your dried oregano and half your ground smoked paprika with 350ml boiled water, your chicken stock mix and a pinch of salt and pepper Give everything a good mix up and bring to the boil over a high heat Once boiling, return the pork belly to the dish, skin-side up Put the dish in the oven and cook, uncovered, for an initial 30 min Once the pork has had 30 min, remove the dish from the oven and add the chopped red pepper Return the dish to the oven for a final 30 min or until thick and saucy and the pork is cooked through – this is your crispy pork belly & smoky sauce Add the potato wedges to a baking tray with a drizzle of vegetable oil, a pinch of salt and the remaining smoked paprika and dried oregano and mix everything together Put the tray in the oven for 25-30 min or until golden and crisp Remove the crispy pork belly from the dish and cut into 6 slices To serve, top the smoky sauce with the pork belly slices and the salad with the wedges to the side #porkbelly #crispy #foodtiktok #foodie #fyp #viralrecipe #election #uselection #gousto
